This is a recipe for a semi wheat bread made with water, not milk. It is
adapted from a Belgian breadbaking recipe book.
Ingredients:
700 g. white flour (appr. 6 cups)
300 g. wheat flour (appr. 2 1/2 cups)
6 dl water (I actually use a little more usually)
15 g dry yeast (2 packages)
20 g. salt
20 g. butter
Preparing the dough:
Dissolve yeast in a bit of warm water, add a little bit of sugar if you
want. After ten minutes or so, add flour and water and knead. Add salt and
butter.
First rising period: ca. 15 minutes
Beat the dough, knead and let rise a second time for about 15 minutes
Divide the dough in three equal parts, form three bolls and let rise a third
time for about 15 minutes.
Beat dough again, put three parts in small baking dishes, and let rise a last
time for about 40 minutes.
Oventemperature: 220 Celcius, ca. 450 F.
Baking time: 45 minutes
To make an all white bread, use 1 kg white flour (8 1/2 cups), half a
liter of lukewarm water, 10 to 15 g. of dry yeast, 20 g. of salt and,
if you want, 20 g. of butter. 1st rising time = 20 minutes, second =
20 minutes, last rising is 30 minutes. Oven temperature and baking time
is the same as above.
To make an all wheat bread, use 1 kg of wheat flour (8 1/2 cups), 6 1/2 to 7
dl of water, 15 to 20 g. salt, 20 g. butter and 15 g. of dry yeast. Knead
the dough a little extra. First rising time = 20 minutes, second rising time
= 10 minutes, divide in three parts, third rising time = 15 minutes, put in
baking dishes, last rising time = 45 minutes. Oven temperature and baking
time are the same as above. To add steam to the baking process put a small
dish of water on the floor of the oven.
